La Administración Restaurantera en Tiempos de Crisis: Analisis de Estrategias de Resilencia y Adaptación
Resumen
El presente artículo tiene como objetivo analizar las estrategias de resiliencia organizacional e innovación digital implementadas por el sector restaurantero en contextos de crisis, con énfasis en la pandemia por COVID-19. Se desarrolló una revisión sistemática de literatura científica publicada entre 2020 y 2025, consultando únicamente bases de datos indexadas como Scopus y Web of Science. El enfoque metodológico fue cualitativo, de tipo exploratorio-descriptivo, con un diseño documental y transversal. Entre los principales hallazgos destacan la implementación de estrategias resilientes como la diversificación de servicios, la toma de decisiones ágiles, el liderazgo transformacional y el fortalecimiento de redes de apoyo. Asimismo, se evidencia un acelerado proceso de digitalización que transformó modelos de negocio mediante herramientas como plataformas de entrega, menús digitales y pagos sin contacto. Estos resultados revelan que la resiliencia y la innovación no solo permitieron la continuidad operativa, sino también consolidaron procesos de transformación estructural que fortalecerán la sostenibilidad del sector. La investigación sugiere seguir profundizando en el análisis de capacidades dinámicas, especialmente en microempresas, para ampliar el alcance de estrategias adaptativas frente a futuras contingencias.
