Alimentos ultraprocesados y su impacto en las habilidades cognitivas de estudiantes universitarios. Una revisión sistemática
Resumen
El consumo de alimento ultraprocesados está asociado a un mayor riesgo de desarrollar enfermedades metabólicas y cardiovasculares, mientras que en el ámbito escolar se correlaciona a un declive de las habilidades cognitivas y por lo tanto el rendimiento escolar. En este sentido se hizo una revisión sistemática de 220 artículos en bases de datos como Scopus, SciELO, Latindex, Redalyc y Google Scholar de los cuales se seleccionaron 24 que abordan la relación entre el consumo de alimentos ultraprocesados y su impacto en las habilidades cognitivas de estudiantes universitarios. Los resultados revelan que el consumo de alimentos procesados se relaciona de manera inversa al rendimiento académico, esto se debe a que este tipo de alimentos no suministran los nutrientes ni los aminoácidos necesarios para cumplir las funciones cerebrales, lo cual se observa en una disminución de las habilidades de comprensión lectora, comunicación y razonamiento matemático, por lo que se recomienda promover dietas que tengan como prioridad la ingesta de proteína, frutas y vegetales, ya que existe una correlación positiva entre el consumo de las mismas y un adecuado rendimiento académico.
